海蝦1斤(約10隻)
生粉適量
熟鹹蛋6隻
糖少許
做法:
1.把海蝦洗淨瀝乾水,挑出蝦腸,剪掉蝦鬚、蝦腳及蝦頭前的尖位。
2.把海蝦前後撲上生粉,油滾起煙,放入海蝦煎炸成金黃色,盛起待用。炸過的油保留作炒蛋黃汁用。
3.熟鹹蛋黃切小粒。
4.剛炸過的油滾後,放入熟鹹蛋黃粒,以中慢火把熟鹹蛋黃煮融,放入海蝦快速兜勻即可上碟,以少量的糖調味。
Ingredients:
1 catty of prawns (about 10 pieces)

6 salty egg yolks, cooked
sugar
Steps:
1.Wash and drain prawns, then devein them. Cut prawn’s antennae, legs and pointy part in head.
2.Dab both sides of prawns in corn flour. Heat oil until smoky. Pan fry prawns till golden, drain and set aside. Save the oil for frying salty egg yolks.
3.Finely chop cooked salty egg yolks.
4.Bring the oil to boil, add in salty egg yolks, fry in medium low heat until the yolks melt. Stir in prawns quickly and serve. Add a little sugar to season.
