1. Shred garlic, green onion, coriander and ginger. Cut red chili in strips. Slice onion. Cut wingette in half. Put a little dark soy sauce on wingette.
2. Heat the oil, pan fry wingette in mid-heat, then take it up. Stir fry Sichuan pepper in the pan, put in ginger, garlic, red chili and onion.
3. Put in wingette, then season with soy sauce, oyster sauce, sugar, Shao Xing wine and 100ml of water. Cover the lid and cook in mid-low heat for 8 minutes.
4. Thicken the sauce with cornstarch water. Put in coriander and green onion.
