【三餸一湯】鮮茄迷你肉丸

牛肉食譜雞蛋蔬菜15-30分鐘

材料:
番茄 2個
半肥瘦牛肉碎 200克
麵包糠 50克
蛋 1隻
乾葱 1粒
蒜頭 2粒
香葉 1片
水 1杯
乾芫荽 少許
調味:
茄汁 1湯匙
鹽 少許
糖 少許
黑椒 少許

做法:
1.乾葱和蒜頭切碎。番茄切粒。
2.燒熱油,爆香乾葱和蒜頭,加入番茄拌炒,加入茄汁、黑椒和香葉,加水1杯。煮滾後收中火煮15分鐘。
3.牛肉碎加麵包糠和蛋拌勻。加糖、鹽和乾芫荽,跟牛肉碎攪拌,搓成肉丸。燒熱肉丸表面煎至焦色,盛起。
4.把已煮軟的番茄壓茸,加入肉丸,再加2湯匙水,收細火再煮10分鐘。加鹽、糖和黑椒調味。
5.肉丸上碟,再把番茄醬汁淋上面,撒芫荽裝飾。

Mini meat balls with fresh tomato sauce
Ingredients:
Tomato 2 pcs
Minced beef 200g
Bread crumbs 50g
Egg 1 pc
Ketchup 1 Tablespoon
Shallot 1 pc
Garlic 2 cloves
Bay leave 1 pc
Water 1 cup
Dried parsley Little
Seasoning:
Ketchup 1 Tablespoon
Salt Little
Sugar Little
Black pepper Little

Steps:
1.Shred shallot and garlic. Dice tomato.
2.Heat the oil, pan fry shallot and garlic. Then stir fry with tomato. Put in ketchup, black pepper, bay leave and 1 cup of water. Boil the sauce then turn to mid-heat for 15 minutes.
3.Minced beef mix with bread crumbs and egg. Season with sugar and salt. Put a little dried parsley. Roll mini meat balls then pan fry meat ball until turn brown.
4.Press cooked tomato and put meat ball into tomato sauce. Put 2 Tablespoons of water in pan. Turn to low heat and cook 10 minutes. Season with salt, sugar and black pepper.
5.Put tomato suace on top of meat ball. Garnish with dried parsley.
