三餸一湯|雜菜芝士可樂餅 Japanese Croquette with Mixed Vegetables and Cheese

雜菜芝士可樂餅
材料:
椰菜 100克
甘筍 100克
洋葱 100克
薯仔 1個
水牛芝士 200克
鹽 1茶匙
黑椒 2茶匙
牛油 30克
麵粉 100克
蛋 1隻
麵包糠 100克
1. 薯仔去皮、切件,再將薯仔放入滾水,煮15分鐘。
2. 椰菜切碎;洋葱切粒。
3. 甘筍去皮、切件,再攪碎。
4. 燒熱油,將甘筍、洋葱炒香,加入椰菜,炒至均勻,再加入鹽、黑椒,炒至均勻,並取出。
5. 薯仔瀝乾水分、壓成蓉,將牛油加入薯仔,攪拌均勻。
6. 將雜菜加入薯仔,攪拌均勻。
7. 將薯蓉搓成餅狀,中間放入水牛芝士,放在雪櫃雪凍20分鐘。
8. 蛋打散,將薯餅沾上麵粉、雞蛋、麵包糠。
9. 燒熱油,以中火炸5分鐘,用廚紙印乾油分便成。
Japanese Croquette with Mixed Vegetables and Cheese
Ingredients:
Cabbage 100g
Carrot 100g
Onion 100g
Potato 1 pc
Mozzarella cheese 200g
Salt 1 teaspoon
Black pepper 2 teaspoons
Butter 30g
Flour 100g
Egg 1 pc
Bread crumbs 100g
1. Peel potato and slice, then put potato into boiling water and cook 15 mins.
2. Mince cabbage. Dice onion.
3. Peel carrot, cut into pieces and mince.
4. Heat the oil, stir fry carrot and onion, put in cabbage, stir fry until mix well, then put in salt and black pepper, stir fry until mix well and take out.
5. Drain potato water then crush, then put butter into potato and mix well.
6. Put mixed vegetables into potato and mix well.
7. Roll minced potato as a cake, put mozzarella cheese in the middle, then put in refrigerator for 20 mins.
8. Beat egg, put potato cake into flour, egg and bread Crumbs.
9. Heat the oil, deep fry 5 mins with mid heat then wipe the oil with kitchen paper.
