Braised Chicken with Dried Morel Mushroom and Fish Maw
Ingredients:
Dried morel mushroom 50g
Dried fish maw 200g
Chicken 1/2 pc
Ginger 30g
Garlic 5 slices
Soy sauce 2 tablespoons
Dark soy sauce 1 teaspoon
Oyster sauce 1 tablespoon
Shao xing wine 3 tablespoons
Pepper 1 teaspoon
Sugar 1 teaspoon
Cornstarch 1 teaspoon
1. Soak dried morel mushroom.
2. Put dried fish maw, 1 tablespoon Shao xing wine into boiling water, cook 5 mins, then off the heat, cover the lid and steam 1 hour.
3. Peel garlic and grate ginger.
4. Put ginger, 1 tablespoon soy sauce, dark soy sauce, 1 tablespoon Shao xing wine, pepper into chicken and mix well, then put in cornstarch and mix well, marinate 1 hour.
5. Squeeze out dried morel mushroom water. Cut fish maw into pieces.
6. Heat the oil, stir fry garlic, put in chicken and pan fry until golden brown.
7. Put in fish maw and dried morel mushroom, soy sauce, oyster sauce, sugar, Shao xing wine and water and mix well, cover the lid and cook 15 mins.
