薯仔剝皮椒燜鴨
材料:
薯仔3個
剝皮椒3條
鴨1/4隻
芫荽2束
乾葱1粒
蒜頭1瓣
辣椒1條
水1杯
調味:
蠔油1茶匙
老抽半茶匙
生抽1湯匙
鹽少許
做法:
1.乾葱和蒜頭切片,辣椒切絲,芫荽切碎,剝皮椒切塊。薯仔削皮,切大塊。
2.燒熱油,煎鴨,反轉煎另一面。灒紹酒,加入乾葱、蒜頭和紅椒,加薯仔和剝皮椒。加蠔油、老抽和生抽,加水1杯。
3.蓋上,收中細火燜50分鐘。再加少許鹽調味。
Braised duck with potato and pickled chili
Ingredients:
Potato 3 pcs
Pickled chili 3 pcs
Duck ¼ pc
Coriander 2 bunches
Shallot 1 pc
Garlic 1 clove
Red chili 1 pc
Water 1 cup
Seasoning:
Oyster sauce 1 teaspoon
Dark soy sauce ½ teaspoon
Soy sauce 1 Tablespoon
Salt Little
Steps:
1.Slice shallot and garlic. Cut red chili in strips. Shred coriander. Cut pickled chili in chunks. Peel potato, cut in chunks.
2.Heat the oil, pan fry duck. Pour in Shao Xing wine. Put in shallot, garlic and red chili. Then stir fry with potato and pickled chili. Put in oyster sauce, dark soy sauce and soy sauce. Put in 1 cup of water, stir fry.
3.Cover the lid and cook in mid-low heat for 50 minutes. Season with salt.
