【三餸一湯】冬瓜蝦仁湯

食譜蔬菜30-60分鐘

材料:
冬瓜1斤
蝦半斤
薑2片
葱2條
紹酒1茶匙
水1公升

醃料:
胡椒粉少許
粟粉少許

做法:
1.
冬瓜削皮去籽,切成小方塊,切葱花。
2.
蝦去頭去殼,殼留用。蝦仁加胡椒粉和粟粉醃勻。
3.
白鑊爆香蝦頭蝦殼,灒紹酒,加入滾水,蓋上,收中火煲20分鐘。
4.
撈走蝦殼,加薑片和冬瓜,蓋上,收中火煲15分鐘,加入蝦仁再煲2分鐘。撒上葱花。

Winter melon and shrimp soup
Ingredients:
Winter melon 1 catty
Shrimp ½ catty
Ginger 2 slices
Green onion 2 pieces
Shao Xing wine 1 teaspoon
Water 1L

Marinade:
Pepper Little
Corn starch Little

Steps:
1.
Peel skin of winter melon and take out seeds. Cut winter melon in chunk. Shred green onion.
2.
Take out head and shell of shrimp. Keep the shell. Marinate shrimp with pepper and corn starch.
3.
Pan fry shrimp head and shell, then put in Shao Xing wine and water. Cover the lid and cook in mid-heat for 20 minutes.
4.
Take out the shell. Put in ginger and winter melon. Cover the lid, cook in mid-heat for 15 minutes. Put shrimp in soup and cook for 2 minutes. Put green onion.
