三餸一湯|泰式酸辣蒸盲鰽 Thai Style Steamed Barramundi with Sour and Spicy Sauce

泰式酸辣蒸盲鰽
材料:
盲鰽魚 1條
辣椒 1隻
香茅 4支
南薑 30克
青檸 1個
檸檬葉2片
芫荽 1棵
蒜頭 2瓣
乾葱 1粒
魚露 2茶匙
糖 少許
鹽 1茶匙
步驟:
1. 辣椒切粒;香茅切半,拍扁;南薑切條;青檸1/2個切片、1/2個榨汁。
2. 芫荽用鹽水浸30分鐘,然後切碎芫荽葉;檸檬葉切絲;蒜頭及乾葱切件;盲鰽印乾水分。
3. 將蒜頭、乾葱、芫荽頭、一半檸檬葉、辣椒、青檸汁、魚露、糖,放入攪拌機,攪拌成醬汁。
4. 將一半香茅、南薑放於碟上,放上盲鰽,將剩餘香茅、南薑放進魚肚中。
5. 加入鹽、魚露、剩餘檸檬葉、芫荽葉、青檸片。
6. 以大火蒸盲鰽9分鐘,熄火焗2分鐘,然後倒走多餘水分,最後加入醬汁。
Thai Style Steamed Barramundi with Sour and Spicy Sauce
Ingredients:
Barramundi 1 pc
Hot pepper 1 pc
Lemongrass 4 pcs
Galangal 30g
Lime 1 pc
Kaffir lime leaves 2 slices
Cilantro 1 pc
Garlic 2 slices
Dried shallot 1 pc
Fish sauce 2 teaspoons
Sugar little
Salt 1 teaspoon
Steps:
1. Dice hot pepper. Cut lemongrass into two pieces and slap. Cut galangal into strips. Slice 1/2 pc lime and squeeze 1/2 pc lime.
2. Soak cilantro into salt water for 30 mins then mince cilantro leaf. Shred kaffir lime leaves. Cut garlic and dried shallot into pieces. Wipe barramundi with kitchen paper.
3. Put garlic, dried shallot, cilantro head, a half of kaffir lime leaves, hot pepper, lime juice, fish sauce, sugar into blender, then mix as sauce.
4. Put a half of lemongrass, galangal on plate then put in barramundi, put the rest of lemongrass and galangal inside barramundi.
5. Put in salt and fish sauce, the rest of kaffir lime leaves, cilantro leaf and sliced lime.
6. Steam barramundi for 9 mins with high heat, off the heat and steam 2 mins, then pour away excess water and put in the sauce.
