相信大家都有食過巴東牛肉,但大家又知不知道正宗的巴東牛肉做法?今集「姐姐煮場」系列同樣找來Kocho Hei (Hei)做嘉賓。Ms Hei來港17年,為印尼外傭。煮得一手好餸的她,自創超過六百個食譜,更曾為香港國際社會服務社煮食導師,名副其實是姐姐廚神。她會教我們家鄉泗水的巴東牛肉做法,想知點做?去片啦!
English version: 1 kg Beef 1 ginger 600ml coconut cream 3 bay leaves 1 big chilli 1 cinnamon 1 Pandan leaf 30g dried garlic flakes A little oil
The paste: 150g garlic 100g shallots 50g candlenut 30g roasted turmeric 5-10 small chilli 2 big chilli
Seasoning 1 tsp salt 1 tsp white pepper 1 tsp coriander powder 1 cane sugar
Method 1. Boil the water. Cut the ginger into half and smash them. Bring the cinnamon, half ginger and pandan leave to the boil for 5 minutes. 2. Dice the beef and bring it to the boil for 20 minutes. Tips: to remove its blood-like liquid. 3. Wash and pat dry the beef. 4. De-seed and chop the big chilli. Remove the stem of the small chilli. Put all the ingredients into the blender. Blend it for 30 seconds. 5. Heat the wok and add a little oil. Stir fry all the ingredients with the bay leaf, half of the ginger, the chilli and seasoning for 15 minutes. 6. Add the beef and stir fry for 15 minutes. Add 200g coconut cream. 7. Turn down the head and simmer for 1 hour. Tips: Keep stirring meanwhile to prevent it from burning. 8.Slowly add 400g coconut cream, simmer for 1-2 hours until the beef gets tender.
Indonesian version: 1 kg daging sapi 1 ruas jahe 3 daun salam 1 cabe besar 1 ruas kayu manis 1 daun pandan 30 G BAWANG merah goreng dikit minyak 600 ML santan
BUMBU 150 G BAWANG putih 100 G BAWANG merah 50 G kemiri 30 G kunyit bakar 5 ~10 cane rawit 2 cabe merah besar
CARA 1. rebus air .potong jahe pada separo dan geprek 2. masukan jahe.kayu manis .daun pandan dan rebus 5menit potonh daging dan masukan rebus selama 20 menit tips .untuk menghilangkan air darah dan kotor 3. cuci daging sapi dan tiriskan 4. hilangkan BIJI cabe besar merah dan kopek cabe masukan semua bumbu pada blender dan blender hingga halus bisa dlm 30 detik 5. panaskan wajan kasih dikit minyak .masukan bumbu halus dan daun salam .jahe .cabe .dan bumbu lainya oseng selama 15 menit 6. masukan daging dan aduk 2 selama 15 menit .tambahkan 200 ml santan 7. putar api kecil dan masak selama 1 jam jaga dan d aduk agar tdk gosong 8. pelan 2 tambahkan 400 ml santan dan rebus selama 1 jam ~30 menit sampej daging empuk dan siap
