1. Dice board bean curd. Soak clam with 70 degrees salt water for 5 mins and take clam meat out.
2. Dice hot pepper. Dice ginger. Smack garlic. Dice spring onion.
3. Mix chilli bean sauce, oyster sauce, soy sauce, sugar, chilli oil and a little water as sauce.
4. Put board bean curd and salt into boiling water, cook 30 seconds, take out and drain.
5. Heat the oil, stir fry ginger, garlic and hot pepper, put in minced pork lean and stir fry until golden brown.
6. Put in the sauce, clam, board bean curd and stir fry until mix well, then put in little cornstarch water, diced spring onion, sesame oil and peppercorn chilli oil.
