三餸一湯|雞油花雕蒸象拔蚌 Steamed Geoduck with Chicken Oil and Shao Xing Wine

食譜粵菜海鮮貝類雞肉海味15分鐘以下

雞油花雕蒸象拔蚌
材料:
象拔蚌4隻
雞皮2塊
紹興酒1湯匙
玫瑰露酒1茶匙
瑤柱湯 200毫升
薑20克
步驟:
1. 薑切絲。
2. 象拔蚌洗淨,撕走外層,再印乾水分。
3. 燒熱鑊,加入雞皮,煎出雞油後再取出。
4. 將象拔蚌、薑絲放於碟上,加入雞油、紹興酒、玫瑰露、瑤柱湯,以大火蒸4-6分鐘。
Steamed Geoduck with Chicken Oil and Shao Xing Wine
Ingredients:
Geoduck 4 pcs
Chicken skin 2 pcs
Shao xing wine 1 tablespoon
Mei kuei lu wine 1 teaspoon
Dried scallop soup 200ml
Ginger 20g
Steps:
1. Shred ginger.
2. Wash geoduck and tear away the outer layer and wipe with kitchen paper.
3. Heat the pan and put in chicken skin, pan fry until melted chicken oil and take out.
4. Put geoduck and shred ginger on the plate, put in chicken oil, Shao xing wine, Mei kuei lu wine and dried scallop soup, steam 4-6 mins with high heat.

薑去皮切絲。

燒熱鑊,將雞皮的油分煎出,倒入碗中備用。

薑絲放於象拔蚌上,加雞油、紹酒、玫瑰露、瑤柱湯,用大火蒸熟。
