【三餸一湯】蝦粒魚肉伴玉環 Shrimp and Minced Mud Carp Stuffed Hairy Gourd

蝦粒魚肉伴玉環
材料:
鯪魚肉 200克
蝦6隻
節瓜2條
薑2片
蠔油1湯匙
糖1茶匙
鹽1茶匙
胡椒粉 少許
紹興酒1茶匙
生粉1湯匙
麻油 少許
雞湯100毫升
鹹蛋白2隻
步驟:
1. 節瓜去皮、切件、去芯成環。
2. 將糖、蠔油、鹽、胡椒粉、紹興酒、生粉、麻油加入鯪魚肉中,攪拌均勻。
3. 蝦去殼、切背、挑走蝦腸,將鹽、胡椒粉、紹興酒、生粉、麻油加入蝦,攪拌均勻,再加入鯪魚肉。
4. 將生粉撲入節瓜環,釀入鯪魚肉,將節瓜擺上碟,加入雞湯,以大火蒸15分鐘。
5. 倒出雞湯,將雞湯煮滾,加入生粉水,鹹蛋白,攪拌均勻,加至節瓜上。
Shrimp and Minced Mud Carp Stuffed Hairy Gourd
Ingredients:
Minced mud carp 200g
Shrimp 6 pcs
Hairy gourd 2 pcs
Ginger 2 slices
Oyster sauce 1 tablespoon
Sugar 1 teaspoon
Salt 1 teaspoon
Pepper little
Shao xing wine 1 teaspoon
Cornstarch 1 tablespoon
Sesame oil little
Chicken soup 100ml
Salted egg white 2 pcs
Steps:
1. Peel hairy gourd and cut into pieces, cut into rings.
2. Put sugar, oyster sauce, salt, pepper, Shao xing wine, cornstarch and sesame oil into minced mud carp, then mix well.
3. Shell shrimp, make a cut on the backside and remove devein, put salt, pepper, Shao xing wine, cornstarch, sesame oil into shrimp and mix well, then put in minced mud carp.
4. Add cornstarch into hairy gourd rings, stuffed minced mud carp, put hairy gourd on the plate, then add chicken soup, steam 15 mins with high heat.
5. Pour out chicken soup, cook chicken soup until boil, put in cornstarch water, salted egg white and mix well, finally add to hairy gourd.
