豆豉 1茶匙
指天椒 15條
蒜頭 1個
冰糖 少許

胡椒粉 少許
紹興酒 1湯匙
蒸魚豉油 少許
做法:
1.
魚雲加鹽、胡椒粉、紹興酒,醃15分鐘。
2.
蒜頭、指天椒、豆豉切粒;薑切片。
3.
燒熱油,將豆豉、蒜頭爆香。
4.
加入指天椒粒。
5.
薑放在魚雲下,將醬料放在魚雲上。
6.
大火將魚雲蒸熟。
7.
撒上葱花,淋滾油及蒸魚豉油。
Steamed Fish Head with Chili Sauce
Ingredients:
Fish head 2 pcs
Spring onion 1/2 pcs
Ginger few pcs
Black bean 1 teaspoon
Hot pepper 15 pcs
Garlic 1 pc
Rock sugar little
Salt little
Pepper little
Shao Xing wine
Seasoned soy sauce little
Steps
1.
Fish head mix with salt, pepper, Shao Xing wine marinate for 15 mins.
2.
Dice garlic, hot pepper, black bean and slice ginger.
3.
Heat the oil and pan fry black bean, garlic.
4.
Put in hot pepper.
5.
Put ginger under fish head and put the sauce on fish head.
6.
Steam the fish head with high heat.
7.
Add spring onion, heated oil and seasoned soy sauce.
