三餸一湯|台式涼拌肉鬆豆腐 Taiwanese Chilled Pork Floss and Tofu

食譜台灣菜涼拌豬肉豆類15分鐘以下

台式涼拌肉鬆豆腐
材料:
豆腐1盒
皮蛋1隻
豬肉鬆4湯匙
葱1棵
蒜頭2瓣
台式醬油膏2湯匙
鎮江香醋1茶匙
蜜糖1茶匙
麻油1茶匙
步驟:
1. 葱切粒;蒜頭切碎;皮蛋切粒。
2. 燒熱鑊,加入肉鬆,以小火炒至乾身,取出。
3. 燒熱鑊,加入台式醬油膏、鎮江香醋、蜜糖、麻油,煮至滾起,取出。
4. 將豆腐放上碟,加入皮蛋、蒜茸、醬汁、肉鬆,最後灑上葱粒。

Ingredients:
Tofu 1 box
Century egg 1 pc
Pork floss 4 tablespoons
Spring onion 1 pc
Garlic 2 slices
Taiwanese soy paste 2 tablespoons
Zhen Jiang vinegar 1 teaspoons
Honey 1 teaspoon
Sesame oil 1 teaspoon
Steps:
1. Dice spring onion. Mince garlic. Dice century egg.
2. Heat the pan, put in pork floss, stir fry until dry with low heat and take out.
3. Heat the pan, put in Taiwanese soy paste, Zhen Jiang vinegar, honey and sesame oil, cook until boiled and take out.
4. Put tofu on the plate, then put in century egg, minced garlic, the sauce and pork floss, finally add diced spring onion on the top.

葱切成葱花。

豬肉鬆放入熱鑊,用小火炒至乾身。

鑊中倒入醬油膏、香醋、蜜糖及麻油拌勻煮滾。

將皮蛋、蒜茸放豆腐上,加入醬汁、肉鬆,最後灑上葱粒。
