材料:
腐皮 1張
鯪魚肉 適量
陳皮 1片 (浸軟)
酸甜汁:
茄汁 2湯匙
白醋 1湯匙
糖 1.5茶匙
水 3湯匙
白胡椒粉 少許
做法:
1. 芫荽切幼。陳皮切絲。
2. 混合魚肉、陳皮及芫荽。
3. 腐皮剪成四份,再一開三。
4. 把魚肉放上腐皮,包成卷。
5. 混合酸甜汁料,胡椒粉、糖、醋、水、茄汁。
6. 下油煎腐皮卷,待金黄,翻轉。灑水,蓋上煮1分鐘。
7. 開蓋,輕壓腐皮卷,再灑水,蓋上。
8. 略煎後,上碟。把醬汁注入煎鍋煮熱即成。
Fried fish meat, aged peel bean curd sheet rolls
Ingredients:
1 bean curd sheet
Some fish meat
1 pc of aged peel (soaked)
Sweet and sour sauce:
2 tbsp ketchup
1 tbsp white vinegar
1.5 tsp sugar
3 tbsp water
A bit ground white pepper
Steps:
1. Finely chop the coriander and aged peel.
2. Mix fish meat, sliced aged peel, chopped coriander.
3. Quarter a bean curd sheet, then divide into 3.
4. Scoop some fish meat on the bean curd sheet, fix and roll.
5. Mix ground white pepper, sugar, vinegar, water, ketchup.
6. Add oil, fry the rolls until golden brown, flip. Sprinkle some water, cover, cook 1 min.
7. Open the lid, sprinkle some water again, cover.
8. Continue frying until brown, take out. Pour sauce into the pan to heat up, serve with rolls.
