Deep-fried Soft Shell Lobster with Garlic and Chilli
Ingredients:
Soft shell lobster 1 pc
Dried bird’s eye chilli little
Dried er jing tiao chilli little
Green chilli pepper 1 pc
Red chilli pepper 1 pc
Deep fry batter some
Fermented soya beans 2 tbsp
Soy sauce little
Garlic garnish:
Garlic 4-5 cloves (whole)
Minced ginger some
Fermented soya beans some
Soy sauce little
Steps:
1. Mince 4-5 garlic cloves, then add minced ginger and soy sauce to prepare the garlic garnish.
2. Heat oil to 160℃, dip soft shell lobster in batter, deep fry until set, drain.
3. In the same wok of oil, deep fry the garlic garnish until it floats and turns golden brown, add fermented soya beans for deep frying. Return the soft shell lobster into wok, add green and red chilli pepper, dried bird’s eye chilli, dried er jing tiao chilli and soy sauce.
4. Deep fry soft shell lobster until crispy, place lobster on dish, then drain the remaining ingredients, scatter on top of lobster and serve.
