材料:
新鮮豬肚 1個
白胡椒粒 1-1.5湯匙
肉眼 少許
腐竹 適量
白果 約20粒
陳皮 1片
紅棗 3粒
水 約1.5L
做法:
1. 豬肚洗淨,汆水。刮去黄白色黏膜。
2. 瘦肉洗淨切件,汆水。
3. 搗碎白胡椒粒,白鑊爆香。
4.下水,腐竹,大火煲15分鐘至腐竹溶化。
5. 放入白果,瘦肉,陳皮,紅棗,豬肚,中小火煲1.5小時。
6. 下少許鹽調味,熄火,豬肚切件,連湯注入碗中。
Pork tripe peppercorn soup
Ingredients:
1 pc fresh pork tripe
1-1.5 tbsp white peppercorn
Some lean pork
1 pc of bean curd sheet
20 pcs dried ginkgo fruit
1 pc aged peel
3 pcs dried red dates
1.5L water
Steps:
1. Cut the pork. Blanch it with pork tripe.
2. Crush the white peppercorn, roast it until fragrant.
3. Add water, bean curd sheet, boil until dissolved for 15 mins.
4. Add dried ginkgo fruit, pork, aged peel, dried dates and pork tripe, boil for 1.5 hrs with medium-low heat.
5. Season with a bit salt. Off heat. Slice the cooked pork tripe. Serve with soup.
