三餸一湯|腐竹節瓜魚湯 Fish Soup with Bean curd Sticks and Hairy Gourd
食譜粵菜家常菜湯水魚蔬菜蛋煲60分鐘以上
4. 加入滾水、節瓜、一半腐竹、鹹蛋黃、薑,蓋上蓋,轉中火煲45分鐘。
5. 加入另一半腐竹,蓋上蓋,轉小火煲20分鐘,最後加入鹹蛋白,攪拌均勻。
Fish Soup with Bean curd Sticks and Hairy Gourd
Golden threadfin bream 600g
Rice bran oil 5 tablespoons
1. Peel hairy gourd and cut into pieces. Cut bean curd sticks into strips. Slice ginger.
2. Separate salted egg white and egg yolk. Wipe golden threadfin bream with kitchen paper.
3. Heat the rice bran oil, pan fried golden threadfin bream until well done.
4. Put in boiling water, hairy gourd, a half of bean curd sticks, salted egg yolk and ginger, cover the lid and cook 45 mins with mid-heat.
5. Put in the rest of bean curd sticks, cover the lid and cook 20 mins with low heat, finally put in salted egg white and mix well.
注入滾水,下節瓜、一半腐竹、鹹蛋黃及薑,中火煲45分鐘。
