材料:
小茄子 4條
皮蛋 1隻
葱花 1湯匙
蒜頭 2粒
紅椒 2隻
剝皮椒 1隻
油 2湯匙
芝麻 適量
醬汁:
生抽 2湯匙
陳醋 1湯匙
糖 1湯匙
鹽 少許
做法:
1.
茄子對切,再切半。茄子排在碟中,隔水蒸8分鐘。
2.
切蒜茸,切碎剝皮椒和乾辣椒,皮蛋切粒。
3.
醬汁拌勻。燒滾油。
4.
把皮蛋鋪在茄子上,撒上蒜茸、剝皮椒、辣椒、葱花和芝麻。淋醬汁,再淋上 滾油。
Steamed eggplant with preserved egg
Ingredients:
Small eggplant 4 pieces

Green onion 1 Tablespoon
Garlic 2 cloves
Dried Chili 2 pieces

Oil 2 Tablespoons
Sauce:
Soy sauce 2 Tablespoons
Balsamic vinegar 2 Tablespoons
Sugar 1 Tablespoon

Steps:
1.
Cut eggplant in half and cut in quarter. Put eggplant on steam plate, and steam for 8 minutes.
2.
Shred garlic, pickled chili and chili. Dice preserved egg.
3.
Mix soy sauce, balsamic vinegar, sugar and salt as the sauce. Heat the oil.
4.
Put preserved egg on top of eggplant. Spread garlic, pickled chili, chili, green onion and sesame. Pour sauce and boiling oil on top of eggplant.
