薯仔2個
茄子1個
青尖椒1隻
蒜頭2粒
水適量

生抽1茶匙
老抽半茶匙
做法:
1.
蒜頭切片,青尖椒切半,挖籽,切粒。薯仔切粒,浸水洗去澱粉。茄子削皮,切粒,加醋水浸泡。

薯仔倒水,先用白鑊炒乾,加茄子炒至表面水份稍乾,落油繼續炒。下調味炒勻,加水至到面層,蓋上收中細火燜15分鐘。
3.
加少許老抽調色,加入青椒拌炒,炒至收汁變綿身。
Sauteed potato with eggplant
Ingredients:
Potato 2 pcs
Eggplant 1 pc
Green pepper 1 pc
Garlic 2 cloves
Water Little
Seasoning:
Salt Little
Sugar Little
Oyster sauce 1 teaspoon
Soy sauce 1 teaspoon
Dark soy sauce ½ teaspoon
Steps:
1.
Cut garlic in slices. Cut green pepper in half, take out the seed and cut in strips. Then dice green pepper. Potato cut in thick slices, then cut in half and dice potato.

Soak with water to clear the starch. Peel skin of eggplant. Cut eggplant in thick slices, then dice eggplant. Soak eggplant with vinegar water.
3.
Pan-fry potato without oil, then put in eggplant and mix well. Stir-fry the vegetable until the surface becomes dry, put in oil. Season with seasoning and stir-fry.
4.
Put water in pan and cover the ingredients. Cover the lid and cook in mid-low heat for 15 minutes. Then put a little dark soy sauce. Put green pepper and stir-fry until thicken the sauce.
