豆豉醬伴煎鰈魚
醬:豆豉醬
材料:
豆豉1湯匙
油1湯匙
蒜頭1粒
薑1片
水45毫升
醬油30毫升
糖1茶匙
麻油1茶匙
辣椒1隻
煎鰈魚
材料:
鰈魚200克
洋葱半個
芫荽2束
胡椒粉少許
鹽少許
粟粉少許
豆豉醬做法:
1.豆豉加暖水浸一浸,切碎。蒜頭和薑切碎。紅椒去籽,切碎。
2.燒熱油,爆香豆豉,加入蒜頭、薑和紅椒同爆香。
3.加入水和生抽,加糖拌勻。煮滾,加適量粟粉水收汁。加麻油。成豆豉醬。
煎鰈魚做法:
1.洋葱切絲。芫荽切碎。鰈魚抹乾水,兩面抹鹽和胡椒粉,魚皮拍上少許粟粉。
2.燒熱油,爆洋葱,把洋葱撥到鑊邊,開中火,放入鑊,魚肉朝上煎,反轉魚煎另一面。把洋葱先盛起,放芫荽,魚塊,再淋上豆豉醬。

Ingredients:
Fermented bean 1 Tablespoon
Oil 1 Tablespoon
Garlic 1 clove
Ginger 1 slice
Water 45ml
Soy sauce 30ml
Sugar 1 teaspoon
Sesame oil 1 teaspoon
Red chili 1 pc
Pan fried sole
Ingredients:
Sole 200g
Onion 1/2 pc
Coriander 2 bunch
Pepper Little
Salt Little
Cornstarch Little
Sauce Steps:
1.Soak fermented bean with warm water, shred it. Shred ginger and garlic. Take out seeds of red chili, then shred it.
2.Heat the oil, pan fry fermented bean. Stir fry garlic, ginger and red chili.
3.Put in water, soy sauce and sugar, stir well. Boil the sauce, thicken the sauce with cornstarch water if necessary. Put in sesame oil.
Pan fried sole steps:
1.Slice onion. Shred coriander. Pat dry sole, then put on salt and pepper of both side of fish. Put a little cornstarch on fish skin.
2.Heat the oil, pan fry onion. Put onion to the side of pan, turn to mid heat. Pan fry the fish skin side first. Turn another side. Take out onion, put on coriander. Put the fish on top of onion, pour sauce.
