1. Rinse and remove giblets from chicken; rinse spices and herbs, set aside.
2. Prepare a large pot which can fit in a whole chicken, pour soy sauce, sweetened vinegar, ginger, Shaoxing wine and rock sugar in, when the sugar fully dissolves, tip all the spices and herbs, simmer in medium heat, do not bring to a rolling boil.
3. Tip chicken into the sauce, simmer in medium low heat for a while, turn off heat, cook in residual heat for 15 minutes, then turn over the chicken, cook in residual heat for another 15 minutes until cooked thoroughly.
4. Transfer chicken to a tray, douse the sauce onto the chicken, set aside to cool.
5. After cooling, chop the chicken into pieces, pour the sauce over and serve.
