三餸一湯|蟲草花煮白蝦 Braised white shrimp with Cordyceps flowers
食譜粵菜蝦炒煮15-30分鐘
1. 乾葱切碎,薑切細塊。燒熱稍多的油,加入蝦炒至外殼香脆盛起。
2. 原鑊爆香薑、乾葱和葱段,加入蟲草花和清湯半杯炒勻。
3. 加入蝦同炒,灒紹酒,大火煮滾,加鹽炒勻,加粟粉芡水收汁。
Braised white shrimp with Cordyceps flowers
Fresh Cordyceps flowers 150g
Green onion 2 pcs (cut in pieces)
Shallot 1 pc Shao Xing wine 1 Tablespoon
1. Shred shallot. Cut ginger in small pieces. Heat more oil, put in shrimp and stir fry until shell becomes crispy.
2. Stir fry ginger, shallot and green onion, then put in cordyceps flowers and ½ cup of chicken broth.
3. Stir fry with shrimp. Pour in Shao Xing wine. Bring to boil with high heat and put in salt. Thicken the sauce with cornstarch water.
