青豆角炒鮮菇
材料:
青豆角150克
鮮冬菇3隻
甘筍1/4條
蒜頭2瓣
清湯1湯匙
調味:
鹽少許
糖少許
紹酒2茶匙
麻油少許
做法:
1. 冬菇切片,蒜頭切碎,青豆角切段。甘筍削皮,刨絲。水滾加鹽和糖,青豆角汆水5分鐘。
2. 燒熱油,炒香甘筍,加入冬菇同炒。灒紹酒,加蒜頭同炒。
3. 再灒紹酒,青豆角回鑊,加清湯,下糖、鹽和麻油炒勻。
Sauteed green string bean with fresh shiitake mushroom
Ingredients:
Green string bean 150g
Fresh shiitake mushroom 3 pcs
Carrot ¼ pc
Garlic 2 cloves
Chicken broth 1 Tablespoon
Seasoning:
Salt Little
Sugar Little
Shao Xing wine 2 teaspoons
Sesame oil Little
Steps:
1. Slice shiitake mushroom. Shred garlic. Cut green string bean in pieces. Peel carrot then shred carrot with grater. Season boiling water with salt and sugar. Blanch green string bean for 5 minutes.
2. Heat the oil, stir fry carrot. Put in shiitake mushroom and stir fry. Pour in Shao Xing wine, then put in garlic.
3. Put a little more Shao Xing wine. Put back green string bean in pan, put in chicken broth. Season with sugar, salt and sesame oil, stir well.
