【三餸一湯】芫荽皮蛋瀨尿蝦湯 Cilantro, Century Egg and Mantis Shrimp Soup
食譜粵菜湯水蝦蛋蔬菜煮15-30分鐘
1. 芫荽浸鹽水30分鐘;葱切段;皮蛋去殼,切件;薑切片。
3. 加入瀨尿蝦、紹興酒,煮5分鐘,再加入鹽、胡椒粉、鹹蛋白,攪拌均勻。
Cilantro, Century Egg and Mantis Shrimp Soup
Shao xing wine 2 teaspoons
1. Soak cilantro with salt water 30 mins. Cut spring onion into strips. Shell century egg and cut into pieces. Slice ginger.
2. Put ginger, cilantro, spring onion and century egg into boiling water, cook 5 mins.
3. Put in mantis shrimp and Shao xing wine, cook 5 mins, then put in salt, pepper and salted egg white, mix well.
