【三餸一湯】苦瓜炒蝦米

材料:
苦瓜 1條
蝦米 2湯匙
蒜頭 2粒
辣椒 1條
葱 1條
水 1湯匙
鹽 少許
糖 少許
紹酒 少許
粟粉水 少許

做法:
1.蝦米加水浸泡。苦瓜切四段,挖籽,切片。切葱花,紅椒切粒,蒜頭切碎。
2.燒熱油,爆香蝦米,加蒜頭同炒,再加少許油。加入苦瓜,灒紹酒。
3.加1湯匙水,蓋上煮至水份蒸發。加紅椒同炒,下鹽和糖調味,粟粉芡水收汁。

Sauteed bitter melon and dried shrimp
Ingredients:
Bitter melon 1 pc
Dried shrimp 2 Tablespoons
Garlic 2 cloves
Red chili 1 pc
Green onion 1 pc
Water 1 Tablespoon
Salt Little
Sugar Little
Shao Xing wine Little
Cornstarch water Little

Steps:
1.Soak dried shrimp in water. Cut bitter melon in quarters. Take out the seeds, slice bitter melon. Shred green onion. Dice red chili. Shred garlic.
2.Heat the oil, pan fry dried shrimp and garlic. Put a little more oil, then put in bitter melon. Pour in Shao Xing wine.
3.Put in 1 Tablespoon of water in pan. Cover the lid and cook until water evaporate. Stir fry with red chili. Season with salt and sugar. Thicken the sauce with cornstarch water.
