【三餸一湯】魚肉蒸蛋卷 Steamed Egg Roll with Minced Mud Carp

魚肉蒸蛋卷

材料:
鯪魚肉 200克
雞蛋2隻
葱1棵
鹽1茶匙
紹興酒1茶匙
胡椒粉2茶匙
蠔油1湯匙
魚露1茶匙
麻油2茶匙
糖1茶匙
生粉2茶匙

步驟:
1. 葱切粒;雞蛋打勻。
2. 將蠔油、魚露、胡椒粉、紹興酒、糖、生粉、麻油和葱加入鯪魚肉,攪拌均勻,加入少許鹽和胡椒粉。
3. 燒熱油,加入蛋液煎成蛋皮,取出放涼。
4. 將鯪魚肉放在蛋皮上,捲成蛋卷狀。
5. 以大火蒸蛋卷10分鐘,切件。

Steamed Egg Roll with Minced Mud Carp

Ingredients:
Minced mud carp 200g
Egg 2 pcs
Spring onion 1 bunch
Salt 1 teaspoon
Shao xing wine 1 teaspoon
Pepper 2 teaspoons
Oyster sauce 1 tablespoon
Fish sauce 1 teaspoon
Sesame oil 2 teaspoons
Sugar 1 teaspoon
Cornstarch 2 teaspoons

Steps:
1. Dice spring onion. Beat egg.
2. Put oyster sauce, fish sauce, pepper, Shao xing wine, sugar, cornstarch, sesame oil and spring onion into minced mud carp, mix well, then put in a little salt and pepper.
3. Heat the oil, pan fry egg as egg pancake, take out and let it cool.
4. Put minced mud carp on egg pancake, roll as egg roll.
5. Steam egg roll 10 mins with high heat, then cut into pieces.
