1. Clean pea shoots, soak in water for at least 1 hour.
2. Peel winter bamboo shoots, cut off the hard part of the stem, cut into pieces, boil with salt water for a few minutes, remove from water and rinse, dry and set aside.
3. Heat empty pan, add shrimp powder and stir-fry, add oil and ginger and stir-fry until aroma is released. Add winter bamboo shoot, oyster sauce, mirin, and some water to cook.
4. In a separate pot, bring water to boil, add sugar and salt to water. Blanch pea shoots then drained and dried. Place blanched pea shoots in a plate or big bowl.
Add cooked shrimp powder and winter bamboo shoot with sauce on top of blanched pea shoots.
