【三餸一湯】青椒炒肉絲

食譜蔬菜豬肉15-30分鐘

材料:
綠燈籠椒1隻
皮蛋1隻
豬肉薄片80克
辣椒2隻
蒜頭1粒
葱2條
蠔油1茶匙
糖少許

醃料:
糖少許
胡椒粉少許
紹酒 1茶匙
生抽1茶匙
老抽少許
粟粉1茶匙

做法:
1.
肉片對切,再切絲,加醃料醃勻。青椒切條,蒜頭切片,辣椒切圈,葱花切碎,皮蛋切粒。
2.
燒熱油,加入肉絲炒。爆蒜頭和辣椒,加入皮蛋和青椒,加蠔油和糖調味,出鍋前灒入紹酒炒勻即成。

Preserved egg 1 piece
Pork slice 80g
Red chili 2 pieces
Garlic 1 clove
Green onion 2 pieces
Oyster sauce 1 teaspoon
Sugar Little

Marinade:
Sugar Little
Pepper Little
Shao Xing wine 1 teaspoon
Soy sauce 1 teaspoon
Dark soy sauce Little
Corn starch 1 teaspoon

Steps:
1.
Cut the meat in half then cut in strip. Marinate with marinade. Cut bell pepper and garlic in strip. Shred chili and green onion. Dice preserved egg.
2.
Heat the oil, pan fry meat then put in garlic and chili. Stir fry with preserved egg and pepper. Season with oyster sauce, sugar and Shao Xing wine. Mix well.
