1. Slice courgette into thick pieces. Take out a circle from the courgette centre and make it as a ring. Cut the feet of Shiitake mushroom and dice it. Shred black fungus. Beat the egg.
2. Mix chicken with black fungus and Shiitake mushroom. Put in ½ of egg and marinade.
3. Pat a little cornstarch into inner ring of courgette. Stuff the courgette with chicken stuffing.
4. Heat the oil, put in courgette ring, pan fry in mid-heat until set the shape. Turn another side, cover the lid and pan fry for 2 minutes. Open the lid and cook for 2 more minutes.
