【三餸一湯】芹菜檸檬冬菇蒸烏頭

材料:
烏頭1條
芹菜150克
鹹檸檬2個
冬菇3隻
芫荽2棵(去莖切段)
葱1棵(切䓤花)
油2湯匙
蒸魚豉油2湯匙

做法:
烏頭請魚販去內臟及去鱗,洗淨抹乾
鹹檸檬切幼絲
冬菇浸軟,去蒂切幼絲
芹菜撕去硬絲,切段備用
芹菜段鋪在碟上,放上烏頭
烏頭上再鋪上鹹檸檬絲及冬菇絲
隔水蒸約12分鐘。
取出瀝出多餘水分後,放葱絲及芫荽絲
淋上滾油及蒸魚豉油,完成

Steamed Grey Mullet with Lemon, Shiitake Mushroom and Chinese Celery
1 grey mullet
150g Chinese celery
2 salted lemons
3 shiitake mushrooms
2 stalks coriander (discard steam and cut into sections)
1 stalk spring onion (cut into thin shred)
2 tbsp oil
2 tbsp steamed fish soy sauce

Steps:
Ask fish sellers to remove scales and guts of grey mullet. Rinse and pat dry.
Cut salted lemons into thin shred.
Soak shiitake in water until tender. Discard stem. Cut into thin shred.
Tear off hard strings of Chinese celery. Cut into sections.
Place Chinese celery then grey mullet on plate.
Spread shredded lemon and shiitake mushroom on fish.
Steam over boiling water for 12 minutes.
Drain off excess water. Add spring onion and coriander.
Drizzle hot oil and steamed fish soy sauce. Done.
