【三餸一湯】薯仔合桃眉豆湯

食譜素食蔬菜豆類湯水60分鐘以上

材料:
薯仔 3個
合桃 50克
眉豆 50克
紅棗 4粒
薑 2片
陳皮 1/4塊

步驟:
1.眉豆浸水30分鐘;薯仔去皮及切件;陳皮浸軟後印乾水分,刮去果瓤;薑切片。
2.將陳皮、薯仔、眉豆、合桃、紅棗加入水中,蓋上蓋,煲滾。
3.加入薑片,蓋上蓋,轉小火煲約1.5小時。


Potato, Walnut and Black Eyed Bean Soup

Ingredients:
Potato 3 pcs
Walnut 50g
Black eyed bean 50g
Red jujube 4 pcs
Ginger 2 pcs
Aged peel 1/4 pc

Steps:
1.Soak black eyed bean, peel potato and cut into pieces, wipe aged peel with kitchen paper after soak, then scrape off white pith, slice ginger.
2.Put in aged peel, potato, black eyed bean, walnut, red jujube into water, cover the lid and cook until boiling.
3.Put in ginger, cover the lid and cook 1.5 hours with low heat.

陳皮浸軟後印乾水分,用刀刮去果瓤。

鍋中加水,放入陳皮、薯仔、眉豆、合桃及紅棗煲滾。

再下薑片冚蓋,以小火煲約個半小時。
