【三餸一湯】鮮茄煮牛肉

牛肉食譜蔬菜15-30分鐘

材料:
鮮牛肉 適量
番茄 3個
茄汁 2湯匙
喼汁 1湯匙
水 半碗
片糖 1/3磚
生粉水 少許

牛肉調味:
胡椒粉 少許
生抽 1茶匙
老抽 半茶匙
油 1湯匙
糖 少許
鹽 少許
水 4-6湯匙
蒜頭 2粒
生粉 少許

做法:
1.把牛肉切片。
2.加生抽、胡椒粉、糖、老抽調味。
3.下生粉混合,逐少加水,攪拌。
4.最後下油,略醃。
5.把番茄切件。
6.拍扁蒜頭。
7.把片糖剁幼。
8.下油,爆香蒜頭,下牛肉炒至半熟,取出。
9.下番茄炒,加入片糖。
10.下適量熱水、茄汁、喼汁、老抽煮數分鐘。
11.放回牛肉,下葱段炒匀。下生粉水打芡。
12.熄火,下胡椒粉調味,上碟。

Beef and tomatoes stir-fry
Ingredients:
Beef few
Tomatoes 3 pcs.
Ketchup 2 tbsp
Worcestershire sauce 1 tbsp
Water ½ bowl
Slab sugar 1/3 pc
Potato starch slurry little

Marinade:
Ground white pepper little
Light soy sauce 1 tsp
Dark soy sauce ½ tsp
Oil 1 tbsp
Sugar little
Salt little
Water 4-6 tbsp
Garlic 2 cloves
Potato starch little

Directions:
1.Slice the beef.
2.Marinate with white pepper, sugar, dark soy sauce, potato starch, mix well.
3.Add water gradually, mix well.
4.Add oil at last, marinate for a while.
5.Slice tomatoes.
6.Finely chop the slab sugar.
7.Press garlic, heat oil, fry the garlic until fragrant. Stir-fry the beef until medium rare, take out.
8.Add tomatoes, slab sugar, then add some hot water to cook.
9.Season with ketchup, Worcestershire sauce, dark soy sauce, cook for a few minutes.
10.Bring back the beef, add spring onion, stir fry.
11.Add starch slurry, mildly thicken the sauce.
12.Off heat, season with some ground white pepper. Serve hot.
