糖 1茶匙或更多
蘋果醋 1.5-2湯匙 (逐少加,試味調節酸度)

做法:
1. 混合日式麵豉醬、醬油、麻油、蘋果醋、油、糖。
2. 把茄子切半再切長條。混合少許油。
3. 開大火煲水,立即把茄子放上蒸架,蒸2.5分鐘。
4. 開蓋,取出茄子。把茄子切半。
5. 上碟,淋上醬汁即成。
Steamed eggplants with soybean paste sauce

2/3 tbsp Japanese miso
1-1.5 tsp sugar
1.5-2 tbsp apple cider vinegar (adjust to taste)
1/2 tbsp Japanese light soy sauce
1 tbsp sesame oil
1 tsp cooking oil
Steps:
1. Mix Japanese miso, sesame oil, vinegar, light soy sauce, oil, sugar.
2. Slice eggplants, mix with a bit oil.
3. Bring water to a rolling boil, place egg plants on rack, steam 2.5 mins.
4.Off heat, take out eggplants. Slice into half.
5. Serve with sauce.
