三餸一湯|豉椒炒蟶子 Stir fried Razor Clam with Black Bean and Chili Bean Sauce
食譜粵菜家常菜貝類炒海鮮15-30分鐘
1. 蟶子放入水加鹽以助吐沙,再刷洗;蒜頭、乾葱、豆豉切碎。
4. 加入蟶子、紹興酒、蠔油、生抽、老抽、糖,炒至均勻。
Stir fried Razor Clam with Black Bean and Chili Bean Sauce
Chili bean sauce 1 teaspoon
Shao xing wine 1 tablespoon
Oyster sauce 1 tablespoon
Dark soy sauce 1 teaspoon
1. Add salt into water, put razor clam in helps to remove sand, then scrub razor clam. Mince garlic, dried shallot and black bean.
2. Heat the oil, stir fry dried shallot, black bean, garlic, fry until mix well.
3. Put in chili bean sauce and a little water, fry until mix well.
4. Put in razor clam, Shao xing wine, oyster sauce, soy sauce, dark soy sauce and sugar, stir fry until mix well.
