材料:
西洋菜 600克
乾陳腎 2個
豬𦟌 200克
南北杏 10克
蜜棗 2粒
果皮 適量
鹽 適量
水 4公升
煮法:
1. 將乾陳腎用水浸透洗淨,汆水備用
2. 南北杏、蜜棗洗淨
3. 果皮浸水洗淨,刮走陳皮內裏的瓤
4. 豬𦟌汆水備用
5. 煲滾4公升水,水滾後先放西洋菜,再放入所有材料
6. 大火煲約30分鐘,轉慢火煲約2小時。下少許鹽調味
Ingredients:
600g Watercress
2 dried duck gizzards
200g pork shank
10g sweet apricot kernel and bitter apricot kernel
2 candied dates
Some dried tangerine peel
To serve salt
4L water
Steps:
1. Soak dried duck gizzard in water and rinse well. Briefly scald with boiling water.
2. Rinse apricot kernel and candied dates.
3. Soak dried tangerine peel in water until tender, scrape off white pith.
4. Briefly scald pork shank with boiling water.
5. Boil water. Add watercress first, then other ingredients.
6. Bring to boil over high heat for 30 minutes. Adjust to low heat and boil for 2 hours. Add a little salt.
