材料
急凍三文魚扒 1塊
薑絲 適量
鹽半 茶匙
黑椒 1茶匙
葱油 (葱花醃料):
葱花 適量
糖 1茶匙
鹽 1茶匙
雞粉 1/3茶匙
麻油 3茶匙
胡椒粉 少許
葱油 (炸油材料):
洋葱半個
葱 (切小段) 2條
蒜片 5片
薑片 6片

三文魚解凍後,洗淨抹乾水分,以鹽和黑椒醃15分鐘。

洋葱去皮切塊,葱切小段,蒜頭及薑去皮切片。

製作葱油:預備一鍋滾油,把所有炸油材料落鑊一起炸,炸至金黃色。然後隔渣只保留油的部份待用。

把所有葱花醃料與葱花拌勻,倒油入葱花內,拌勻成葱油。
5)
下油,油滾起煙,放入薑絲炒香,再放入三文魚扒,把兩面煎至熟透呈金黃色,盛起,倒上葱油,即成。
Pan-fried Salmon with Spring Onion
Ingredients
1 frozen salmon
Shredded ginger
1/2 tsp salt
1 tsp black pepper
Spring onion oil (marinade for chopped spring onions)
Chopped spring onions
1 tsp sugar
1 tsp salt
1/3 tsp chicken powder
3 tsp sesame oil
Ground white pepper
Spring onion oil (oil part)
1/2 onion
2 spring onions (sectioned)
5 garlic slices
6 ginger slices

Defrost the salmon, wash and wipe dry, season with salt and black pepper for 15 minutes.

Peel and section the onion, cut spring onion into sections, peel and slice the garlic and ginger.

Cooking spring onion oil: prepare a hot pot of oil. Deep fry all ingredients into golden color. Drain and reserve the oil.

Mix all seasonings with chopped spring onion. Pour in the oil and mix well to become the spring onion oil.
5)
Heat oil to boil. Saute the shredded ginger and add salmon. Pan-fry until it turns into golden color for both sides. Pour the spring onion oil, ready to serve.
