三餸一湯|鹹蛋黃乾煸四季豆 Sautéed Green Beans with Salted Egg Yolk
食譜星馬菜蛋蔬菜炒15分鐘以下
1. 四季豆去筋切小段(約3吋長)。鹹蛋黃切小粒。
2. 下油油滾,放入四季豆炸至乾煸狀態(約6-7分鐘),隔油盛起。
3. 取一平底煎鑊,小火放入無鹽牛油,煮至融化,放入鹹蛋黃,煮至起泡狀態。
4. 倒入已炸好的四季豆快速炒勻,加入紹酒及糖調味,炒勻。盛起上碟即成。
Sautéed Green Beans with Salted Egg Yolk
1. Cut the green beans into 3-inch length pieces. Dice the salted egg yolk.
2. Heat oil to boil. Add the green beans and deep fry (around 6-7 minutes). Drain and dish up.
3. Pick another frying pan. Melt the unsalted butter with low heat. Add salted egg yolk and stir fry until there are bubbles and melted.
4. Add the green beans and stir fry quickly. Add the Shaoxing wine and season with sugar. Stir well. Dish up and ready to serve.
