Braised Homemade Minced Fish with Shiitake Mushroom
Ingredients for minced fish:
Minced mud carp 4 taels
Egg 2 pcs (separate egg yolk and egg white)
Salt little
Red curry paste 1 tbsp
Corn starch 1 tbsp
Sugar 1/2 tsp
White pepper 1/4 tsp
Other ingredients:
Fresh shiitake mushroom 8 pcs
Scallion 1 bunch (cut into sections)
Ginger slices several
Oyster sauce 2 tbsp
Soy sauce 1 tsp
Dark soy sauce 1 tsp
Shaoxing wine 1/2 tbsp
Sesame oil 1/2 tbsp
Method:
1. Season minced mud carp, add egg yolk and white pepper, stir vigorously until mixture becomes gelatinous.
2. Add salt into egg white, beat until stiff, then fold into minced mud carp in 3 to 4 parts.
3. Heat oil in wok with low heat, roll minced mud carp into balls with spoons, deep fry until golden brown, remove and drain minced fish with the heat on.
4. Remove stalks of shiitake mushrooms; cut scallions into sections.
5. Heat clay pot, add oil and sauté ginger slices, then toss minced fish and shiitake mushrooms in, add oyster sauce, soy sauce and dark soy sauce, sauté until fragrant, add 100ml water, cover lid and braise for 5 minutes until sauce thickens, add scallions, mix in sesame oil and Shaoxing wine, thicken sauce with corn starch mixture.
