Ingredients:
3pcschickenthighmeat,1/2pconion,1/2lbbabycarrot,1/5lbgreenpeas,10pcsasparagus1/2cupwhitewine,3glovesgarlic,dashofthyme&chives
Sauce:
3tspeachofoliveoil&Frenchmustard,1/2tspvinegar,dashoflemonjuice,1tspsugar
Method:
1.Washandwipedrychickenthighs,marinatewithsaltandpepper.Mixbutterwitholiveoil,heatinapan,shallowfrychickenthighstillgoldenbrown,addonionandgarlic,thenputinwhitewine,thyme&chieves,bringtotheboil,lowertheheatandcoverwithalidfor15minutestilldone,takeoutthechickenthighandshred.
2.Combineoliveoil,mustard,vinegar,lemonjuiceandsugar.Mixwell.
3.Washbabycarrots,greenpeasandasparagus,thenblanchinboilingwaterwitholiveoilandsalt,takeoutthevegetable,rinseanddrain.Putthevegetableandchickenintoadish,pourinthesauce,serve.

2pcschilli
3glovesgarlic
somecoriander
1stalkspringonion
someoliveoil
Method:
1.Wash,peelprawns,cutoffthehead,leavingthetailsintact,removeveinsfromback,wipedry.
2.Removetheseedfromthechilli.Dicegarlic.Heatbutterwitholiveoil,sautechilliandgarlicoverlowheat.
3.Addprawnsandturntolowheat.Shallowfrytheprawntillgoldenbrown,addsaltandlemonjuice.Takeout,sprinkleinchoppedspringonionandcoriander.Serve.
