【三餸一湯】蒜茸欖角蒸馬友 Steamed Threadfin fish with Chinese preserved olives

蒜茸欖角蒸馬友

材料:
馬友魚 (開邊) 1條
欖角 6粒
紅辣椒 1隻
蒜 5粒
薑茸 1湯匙
糖 半茶匙

做法:
1. 下凍水浸欖角,約5分鐘。
2. 切幼辣椒,剁幼薑,拍扁及切幼蒜頭,欖角及葱切粒。
3. 混合蒜粒及薑茸,下欖角、辣椒,少許糖,灒入滾油。
4. 把魚放上碟,放上蒜茸欖角混合物。
5. 大火蒸8分鐘取出,灒滾油,下生抽,放一些葱粒,趁熱享用。

Steamed Threadfin fish with Chinese preserved olives

Ingredients:
Threadfin fish 1 pc (butterflied)
Chinese preserved olives 6 pcs
Chili 1pc
Garlic 5 cloves
Ginger paste 1 tbsp
Sugar ½ tsp

Steps:
1. Soak the Chinese preserved olives in cold water for about 5 mins
2. Finely slice the chili, finely chop the ginger, press and finely chop the garlic, dice the Chinese preserved olives and green onion.
3. Mix the chopped garlic and ginger, add the Chinese preserved olives and chili. Season with a little bit sugar, pour hot oil in.
4. Put the fish on a plate, spoon the garlic and Chinese preserved olives mixture onto the fish.
5. Steam for 8 mins over high heat, take out, pour some hot oil on the fish, season with a little bit light soy sauce. Sprinkle with some green onion, serve hot.
