泰式涼拌蟶子
材料:
蟶子 600克
葱 1棵
辣椒 1隻
蒜頭 3片
檸檬葉 2片
香茅 2支
青檸 1個
小番茄 200克
魚露 3湯匙
糖 1湯匙
麻油 2湯匙
做法:
1.蟶子放入水加鹽,吐沙;葱、辣椒、蒜頭切粒;檸檬葉切碎;香茅根部切碎。
2.將辣椒、蒜頭、檸檬葉、香茅攪碎成配料;小番茄對切;青檸榨汁及取走籽。
3.將魚露、麻油、青檸汁、糖混合成醬汁,將配料加入。
4.煲滾水,加入蟶子,煮5分鐘,蟶子取出,放入冰水浸5分鐘。
5.蟶子去殼,加入醬汁、小番茄、葱,攪拌均勻。
Thai Style Chilled Razor Clam
Ingredients:
Razor clam 600g
Spring onion 1 pc
Hot pepper 1 pc
Garlic 3 slices
Kaffir lime leaves 2 slices
Lemongrass 2 pcs
Lime 1 pc
Baby tomato 200g
Fish sauce 3 tablespoons
Sugar 1 tablespoon
Sesame oil 2 tablespoons
Steps:
1.Add salt into water, put razor clam in helps remove sand. Dice spring onion, hot pepper, garlic. Mince kaffir lime leaves and lemongrass root.
2.Mince hot pepper, garlic, kaffir lime leaves and lemongrass as seasoning ingredients. Cut baby tomato into two pieces, squeeze lime and take out seed.
3.Mix fish sauce, sesame oil, lime juice and sugar as sauce, put in seasoning ingredients.
4.Boil water, put in razor clam and cook 5 mins, take out razor clam and soak in ice water 5 mins.
5.Shell razor clam, put in sauce, baby tomato, spring onion and mix well.
