Method:
1.Cookandshellquaileggs.Patshrimps,addsomesaltandstirintopaste.Coatquaileggswithsomecornflour,stuffitinthemiddleofshrimppaste,leaveforlateruse.
2.Cutspring-rollsheetsintothinshreds,thenstickonthestuffedshrimppastetoforma“bird-nest”.
3.Rinsebroccoli,blenditwithchickenbroth,thenstir-fryitwithdashofoil,saltandchickenpowder.Placeitinthemiddleofaplate.
4.Heatoil,deep-fry“bird-nest”untilgolden,takeout,darinandplacethemaroundbroccoli.
5.Marinateshelledprawnswithsaltandcornflour,deep-fryforawhile,takeoutwhenitisdone.
6.Sautegarlicclovesandginger,addinprawns,carrotandseasonings,thickenthesaucewithcornflourmixtureandstir-well.Placeontopofbroccoli.Serve.
