1. Clean the dried straw mushrooms and soak in one bowl of warm water until soft. Remove mushrooms from water, cut off the hard part of the stem, reserve the mushroom water and set aside.
2. Bring a pot of water to a rolling boil, add E-fu noodles and cook until softened. Remove from water, drained, and set aside.
3. Heat an empty pan and add shrimp powder and stir-fry. Once aroma is released, add oil and stir-fry. Then add straw mushroom and stir-fry.
4. Add chives and stir-fry.
5. Add E-fu noodles and add the appropriate amount of reserved mushroom water to the noodles as you are stirring.
6. Add oyster sauce and soy sauce to taste. Stir-fry until sauce thickens.
Note: You can add or reduce the cooking time of E-fu noodles depending on your taste preference.
