三餸一湯|菠蘿蝦 Deep Fried Shrimp with Pineapple
食譜粵菜蝦水果炸煮15-30分鐘
1. 蝦去殼及挑走蝦腸,將胡椒粉、鹽加入蝦,醃10分鐘。
3. 將茄汁、茄膏、白醋、糖、少許水混合,成為醬汁。
4. 將蝦撲上生粉,燒熱油,將蝦以中火炸1分鐘,取出,瀝乾油分。
6. 燒熱鑊,將醬汁煮3分鐘,加入蝦、菠蘿,炒至均勻。
Deep Fried Shrimp with Pineapple
1. Shell shrimp and remove devein, then put pepper and salt into shrimp, marinate 10 mins.
2. Cut pineapple into pieces.
3. Mix ketchup, tomato paste, vinegar, sugar, a little water, mix as sauce.
4. Put cornstarch into shrimp, heat the oil, deep fry shrimp 1 min with mid-heat, take out and drain oil.
5. Turn to high heat and deep fry shrimp 30 seconds, take out and drain oil.
6. Heat the pan and cook the sauce 3 mins, put in shrimp and pineapple, stir fry until mix well.
