【三餸一湯】蠔皇肉醬燴薯蓉 Minced Pork and Mashed Potato with Oyster Sauce

食譜粵菜蔬菜豬肉15-30分鐘

蠔皇肉醬燴薯蓉

材料:
豬肉碎 100克
薯仔2隻
雞湯100毫升
蠔油1湯匙
糖1茶匙
麻油1茶匙
生粉1湯匙
紹興酒1茶匙
水2湯匙
鹽1/2茶匙

步驟:
1. 將糖、生抽、紹興酒、生粉、麻油加入豬肉碎,醃20分鐘。
2. 薯仔去皮、切件,以大火蒸10分鐘,取出及壓成蓉。
3. 煲滾雞湯,加入薯蓉、鹽,將薯蓉放上碟。
4. 燒熱油,爆炒豬肉碎,加入蠔油和少許水炒勻,將豬肉碎加在薯蓉上。

Minced Pork and Mashed Potato with Oyster Sauce

Ingredients:
Minced pork 100g
Potato 2 pcs
Chicken soup 100ml
Oyster sauce 1 tablespoon
Sugar 1 teaspoon
Sesame oil 1 teaspoon
Cornstarch 1 tablespoon
Shao xing wine 1 teaspoon
Water 2 tablespoons
Salt 1/2 teaspoon

Steps:
1. Put sugar, soy sauce, Shao xing wine, cornstarch and sesame oil into minced pork, marinate 20 mins.
2. Peel potato and cut into pieces, steam 10 mins with high heat, take out and crush.
3. Cook chicken soup until boil, put in potato puree and salt, then put potato puree on the plate.
4. Heat the oil, stir fry minced pork, put in oyster sauce and a little water, finally put minced pork into potato puree.

用鑊剷將薯仔壓成蓉。

炒熟肉碎,加入蠔油、少許水拌勻,將肉碎放在薯蓉上。
